I don't think that off-type abilities are as important as the relative difficulty of the monsters in the stack. The types of abilities in the stack help define how difficult the stack is, but there's room for variety while keeping the difficulty curve of the set of monsters in the stack consistent.
The concern isn't related to difficulty. It's - as David stated - the fact that each stack is themed differently, and that this theme is reflected in the mechanics (which is a good thing). If all of the stacks suddenly start having very samey abilities, then that differentiation is lost and the game loses something. The stacks represent differences between the monsters other than just how difficult they are.
